So here we are, at the end of lockdown - the promised utopia. With the "new normal" just around the corner, we chatted to Dr. Mike Banna about how we should approach this new world in order to keep ourselves happy and healthy...
Boys and girls, it is National Avocado Day.
The avocado has given you delicious hangover brunches, quick and easy dinners, guacamole (YES), and has even found its way into your brownies!?
So, how could we not celebrate this glorious occasion?
We’re coming at you with a ridiculously easy smashed avocado on toast recipe, to commemorate this momentous day.
And at the end of it all, let’s avo-cuddle...
Get it? Gosh, we’re so funny.
Pepper (to taste)
Cut open your avo and scoop out all that delicious green goodness and start mashing away dependent on how you like it (a little chunky, totally creamy, whatever). Once you’ve reached your desired consistency, add a squeeze of lemon juice and some pepper to taste, (if you’re feelin’ fancy, add some chopped tomatoes). Toast your sourdough and then spread that smashed avocado till your hearts content.
Chop up some feta and crumble over the top of your avo toast (there’s no limit to feta, go crazy, we would never deny you cheese). Once finished, sprinkle over some chilli flakes and a little olive oil if you’re feelin’ it.
If you’re in need of something more to go with this, we suggest poaching an egg (or two), to finish it off.
